Instructions

  1. Season and Sear Chicken: In a small bowl, combine garlic powder, onion powder, smoked paprika, salt, and black pepper. Generously rub this seasoning blend all over the boneless chicken breasts. Remove the chicken and set aside.
  2. Cook Rice: In a separate medium saucepan, combine the long grain white rice, chicken broth, and salt. Bring to a gentle boil, then reduce heat to low. Cover the pot and simmer until the rice is tender and the liquid is absorbed, about 15-18 minutes. Keep covered and warm until serving.
  3. Make Cheese Sauce: Using the same skillet from the chicken (do not clean out the browned bits), melt the unsalted butter over medium heat. Sprinkle in the flour and whisk constantly to form a roux and cook out the raw flour taste, about 1-2 minutes. Gradually pour in the whole milk and chicken broth while whisking continuously, cooking until the mixture thickens to a smooth sauce. Stir in garlic powder, thyme, cheddar cheese, and parmesan cheese, mixing gently until the cheeses melt completely and the sauce is creamy.
