  • 1½ cups milk
  • 1 cup sour cream (at room temperature)
  • ½ teaspoon onion powder
  • 1 oz. packet Ranch seasoning mix

Instructions

  1. Slice and tenderize the chicken: Slice each chicken breast into 2-3 thinner pieces. If needed, pound them gently with a meat tenderizer until about ½ inch thick to ensure even cooking and juiciness.
  2. Season the chicken: Pat the chicken pieces completely dry with paper towels. Sprinkle Italian seasoning, salt, and pepper evenly on both sides. Brush one side of each piece with melted butter, making sure the butter is not too hot to avoid cooking the chicken prematurely.
  3. Sear the chicken: Heat olive oil in a large pan over medium-high heat. Add the chicken pieces in batches and sear for 4-5 minutes on each side, until a nice golden brown crust forms. Remove the chicken from the pan and set aside.
  4. Prepare the sauce: Lower the heat to medium and add the cream of chicken soup, milk, sour cream, onion powder, and ranch seasoning mix to the same skillet. Stir continuously until all ingredients are well combined and the sauce starts to bubble gently. Allow it to reduce and thicken for about 5 minutes.
  5. Simmer the chicken in the sauce: Return the seared chicken pieces to the skillet, nestling them into the sauce. Spoon some sauce over the top, then partially cover the skillet with a lid. Let the chicken simmer gently for about 10 minutes so it heats through and soaks up the flavors.
  6. Serve: For an extra comforting meal, serve the creamy ranch chicken alongside baked potatoes, spooning additional sauce over the potatoes for added richness.
