  • Author: Ella
  • Total Time: 35 minutes
  • Yield: 10-12 taquitos 1x

Description

Crispy Chicken Taquitos are a delicious Mexican-inspired dish featuring shredded chicken mixed with cheese and spices, rolled tightly in tortillas, and cooked until golden and crunchy. Perfect as a snack, appetizer, or meal, these taquitos can be fried, baked, or air-fried to achieve a crispy texture and are served with a variety of tasty toppings like sour cream, guacamole, and salsa.

Ingredients

Scale

For the Chicken Filling

  • 2 cups cooked shredded chicken
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1/3 cup cream cheese (softened)
  • 1/4 cup salsa
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

For the Taquitos

  • 1012 small corn or flour tortillas
  • Oil for frying (if deep frying) or cooking spray (for baking/air frying)

Optional Toppings

  • Sour cream
  • Guacamole
  • Salsa
  • Shredded lettuce
  • Diced tomatoes
  • Fresh cilantro

Instructions

  1. Prepare the Filling: In a large bowl, combine shredded chicken, shredded cheese, softened cream cheese, salsa, chili powder, cumin, garlic powder, salt, and pepper. Mix well until the ingredients are evenly combined and creamy, creating a flavorful filling for the taquitos.
  2. Prepare the Tortillas: Warm the tortillas slightly either in a pan over low heat or in the microwave. This step makes the tortillas flexible and easier to roll without cracking or breaking.
  3. Assemble the Taquitos: Place a spoonful of the chicken mixture along one edge of each warm tortilla. Roll the tortilla tightly into a cylinder shape, ensuring the filling is secured inside, then place the rolled taquitos seam-side down to keep them sealed during cooking.
  4. Cook the Taquitos: Choose your preferred method:
    • Frying: Heat oil in a pan over medium-high heat. Fry the taquitos for 2 to 3 minutes on each side, until they are golden brown and crispy. Remove and drain on paper towels.
    • Baking: Preheat the oven to 200°C (400°F). Arrange the taquitos on a baking sheet and lightly spray them with oil. Bake for 15 to 20 minutes until crispy and golden.
    • Air Fryer: Preheat the air fryer to 190°C (375°F). Place the taquitos in the basket and cook for 8 to 10 minutes, flipping halfway through cooking, until crisp and evenly browned.
  5. Serve: Serve the crispy chicken taquitos hot with your favorite toppings such as sour cream, guacamole, salsa, shredded lettuce, diced tomatoes, and fresh cilantro for added flavor and freshness.

Notes

  • Roll the taquitos tightly to keep the filling secure and prevent it from spilling during cooking.
  • Use corn tortillas for a more traditional texture and flavor, though flour tortillas also work well.
  • Do not overcrowd the pan when frying to ensure even cooking and optimal crispiness.
  • Preheat the oil properly before frying to achieve a crispy exterior without excess oil absorption.
  • Leftover taquitos can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or air fryer to maintain crispiness.
  • Customize your taquitos by adding jalapeños or hot sauce for spice, buffalo sauce for a tangy twist, or extra cheese for a gooey center.
