For the Burgers and Onions

- 4 slices cheddar cheese
For the Wrap and Toppings
- 4 large flour tortillas, about 10 inches each
- 1 cup crispy fried onions
- 1 cup shredded lettuce
- 1 medium tomato, diced
- 1/2 cup sliced pickles
For the Burger Sauce
- 1/4 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon yellow mustard
- 1 tablespoon pickle relish
Instructions
- Preheat the Skillet: Heat a large skillet or griddle over medium-high heat until very hot to prepare for cooking the smashed patties.
- Make the Burger Sauce: In a small bowl, combine mayonnaise, ketchup, yellow mustard, and pickle relish. Stir well and set aside.
- Divide the Beef: Split the ground beef into 4 equal loose balls for smashing and cooking.
- Cook Onions and Smash Patties: Add oil to the hot skillet if needed. Place thin piles of sliced onion on the skillet, then set a beef ball on top of each. Using a spatula, firmly smash each ball to form very thin patties over the onions.
- Season and Cook Patties: Sprinkle salt, black pepper, and garlic powder over each patty. Cook for 2 to 3 minutes until browned and crisp, then flip the patties.
- Add Cheese and Melt: Place a cheddar slice on each flipped patty and cook until the cheese melts completely.
- Assemble the Wraps: Spread a generous amount of the burger sauce over each tortilla. Layer shredded lettuce, diced tomato, sliced pickles, one cheesy smashed patty with onions, and crispy fried onions on top.
- Fold and Toast Wraps: Fold each tortilla into a wrap, pressing the seam to seal. Place wraps seam-side down in the skillet and cook for 1 to 2 minutes per side until the tortillas are golden brown and crispy.
- Rest and Serve: Remove the wraps from the skillet, let them rest for 1 minute to set, then slice if desired and serve hot.
