Instructions
- Mix ingredients: Whisk the Greek yogurt, peanut butter, honey or maple syrup, vanilla extract, and sea salt in a bowl for 30–60 seconds until the mixture is glossy and smooth.
- Add chocolate chips: Gently fold in the mini chocolate chips if you are using them, being careful not to overmix.
- Portion the mixture: Spoon the mixture into silicone molds or a parchment-lined mini muffin tray using a small cookie scoop to ensure even-sized bites.
- Initial freeze: Place the molds or tray uncovered in the freezer for 30 minutes to start firming up.
- Freeze until firm: Cover the molds or tray and continue freezing for an additional 2–3 hours until the bites are completely firm.
- Apply chocolate coating: If desired, dip or drizzle the frozen bites with melted dark chocolate mixed with coconut oil for smoothness, then return them to the freezer for 10–15 minutes to set the chocolate.
- Storage: Store the frozen bites in an airtight container with parchment paper between layers to prevent sticking. Keep frozen for up to 2–3 weeks.
