Description

These Frozen Greek Yogurt Peanut Butter Bites are a delicious and healthy snack combining creamy Greek yogurt, natural peanut butter, and a touch of honey, enhanced with vanilla and sea salt. Optional mini chocolate chips add a delightful texture, and a drizzle or dip of dark chocolate makes these bites an irresistible treat. Perfectly portioned and easy to prepare, they are frozen to create a refreshing, protein-packed snack.

Ingredients

Scale

Main Ingredients

  • 2 cups Plain Greek yogurt (full-fat or 2% for best texture)
  • 1 cup Natural peanut butter (oil-separated, stirred smooth)
  • 23 tbsp Honey or maple syrup (adjust sweetness to taste)
  • 0.5 tsp Vanilla extract (pure for best flavor)
  • 1 pinch Sea salt (enhances flavor and balances sweetness)

Optional Ingredients

  • 23 tbsp Mini chocolate chips (if using)
  • Melted dark chocolate (for dipping or drizzling)
  • 1 tsp Coconut oil (for smoother melted chocolate)

Instructions

  1. Mix ingredients: Whisk the Greek yogurt, peanut butter, honey or maple syrup, vanilla extract, and sea salt in a bowl for 30–60 seconds until the mixture is glossy and smooth.
  2. Add chocolate chips: Gently fold in the mini chocolate chips if you are using them, being careful not to overmix.
  3. Portion the mixture: Spoon the mixture into silicone molds or a parchment-lined mini muffin tray using a small cookie scoop to ensure even-sized bites.
  4. Initial freeze: Place the molds or tray uncovered in the freezer for 30 minutes to start firming up.
  5. Freeze until firm: Cover the molds or tray and continue freezing for an additional 2–3 hours until the bites are completely firm.
  6. Apply chocolate coating: If desired, dip or drizzle the frozen bites with melted dark chocolate mixed with coconut oil for smoothness, then return them to the freezer for 10–15 minutes to set the chocolate.
  7. Storage: Store the frozen bites in an airtight container with parchment paper between layers to prevent sticking. Keep frozen for up to 2–3 weeks.

Notes

  • Use full-fat or 2% Greek yogurt for the best creamy texture.
  • Adjust the sweetness by adding more or less honey or maple syrup according to taste.
  • Oil-separated natural peanut butter should be well-stirred before using.
  • Melt dark chocolate with coconut oil to ensure smooth dipping or drizzling.
  • Silicone molds or mini muffin trays work best for shaping the bites evenly.
  • Store the bites with parchment paper between layers to prevent them from sticking together.
  • These bites are best enjoyed straight from the freezer as a refreshing snack.
