Description

These Frozen Greek Yogurt Peanut Butter Bites are a healthy and delicious snack combining creamy Greek yogurt, natural peanut butter, and a touch of sweetness. Perfect for a quick, protein-packed treat, they are easy to make, require no baking, and can be customized with mini chocolate chips or a drizzle of dark chocolate for an extra indulgence.

Ingredients

Scale

Main Ingredients

  • 2 cups Plain Greek yogurt (full-fat or 2% for best texture)
  • 1 cup Natural peanut butter (oil-separated, stirred smooth)
  • 23 tbsp Honey or maple syrup (adjust sweetness to taste)
  • 0.5 tsp Vanilla extract (pure for best flavor)
  • 1 pinch Sea salt (enhances flavor and balances sweetness)

Optional Ingredients

  • 23 tbsp Mini chocolate chips
  • Melted dark chocolate (for dipping or drizzling)
  • 1 tsp Coconut oil (to smooth melted chocolate)

Instructions

  1. Mix Ingredients: Whisk together the Greek yogurt, natural peanut butter, honey or maple syrup, vanilla extract, and a pinch of sea salt in a bowl for about 30 to 60 seconds until the mixture is glossy and smooth.
  2. Add Chocolate Chips: Gently fold in mini chocolate chips if you choose to use them, being careful not to overmix which could break the chips.
  3. Portion Mixture: Spoon the combined mixture into silicone molds or a mini muffin tray lined with parchment paper using a small cookie scoop to ensure even sizes.
  4. Freeze Initially: Place the molds uncovered in the freezer for 30 minutes to start setting the bites.
  5. Freeze Until Firm: Cover the molds and continue freezing for an additional 2 to 3 hours, or until the bites are completely firm.
  6. Optional Chocolate Coating: If desired, melt dark chocolate with coconut oil and dip or drizzle over the frozen bites, then return to the freezer for 10 to 15 minutes to set the chocolate.
  7. Storage: Store the frozen bites in an airtight container with parchment paper between layers to prevent sticking. Keep frozen for up to 2 to 3 weeks.

Notes

  • Use full-fat or 2% Greek yogurt for the best creamy texture.
  • Natural peanut butter should be well-stirred to ensure consistency.
  • Adjust sweetness according to your preference with honey or maple syrup.
  • Silicone molds or mini muffin trays lined with parchment both work well for forming bites.
  • Adding chocolate chips and dark chocolate coating is optional but adds extra flavor.
  • Freeze uncovered initially to prevent condensation, then cover to avoid freezer burn.
  • Store bites carefully to avoid them sticking together by layering with parchment paper.
