Main Ingredients
- 2 cups Plain Greek yogurt (full-fat or 2% for best texture)
- 1 cup Natural peanut butter (oil-separated, stirred smooth)
- 2–3 tbsp Honey or maple syrup (adjust sweetness to taste)
- 0.5 tsp Vanilla extract (pure for best flavor)
- 1 pinch Sea salt (enhances flavor and balances sweetness)
Optional Ingredients
- 2–3 tbsp Mini chocolate chips
- Melted dark chocolate (for dipping or drizzling)
- 1 tsp Coconut oil (to smooth melted chocolate)
Instructions
- Mix Ingredients: Whisk together the Greek yogurt, natural peanut butter, honey or maple syrup, vanilla extract, and a pinch of sea salt in a bowl for about 30 to 60 seconds until the mixture is glossy and smooth.
- Add Chocolate Chips: Gently fold in mini chocolate chips if you choose to use them, being careful not to overmix which could break the chips.
- Portion Mixture: Spoon the combined mixture into silicone molds or a mini muffin tray lined with parchment paper using a small cookie scoop to ensure even sizes.
- Freeze Initially: Place the molds uncovered in the freezer for 30 minutes to start setting the bites.
- Freeze Until Firm: Cover the molds and continue freezing for an additional 2 to 3 hours, or until the bites are completely firm.
- Optional Chocolate Coating: If desired, melt dark chocolate with coconut oil and dip or drizzle over the frozen bites, then return to the freezer for 10 to 15 minutes to set the chocolate.
- Storage: Store the frozen bites in an airtight container with parchment paper between layers to prevent sticking. Keep frozen for up to 2 to 3 weeks.
