Chicken

  • 2 chicken breasts, cut into bite-sized pieces
  • 1/2 tsp salt
  • 2 tbsp vegetable oil (divided)

Noodles and Vegetables

  • 125g / 4 oz medium egg noodles (chow mein noodles)
  • 1/4 head cabbage, sliced thinly (about 1.5 cups)
  • 1 large carrot, julienned
  • 3 green onions, cut into 2 inch pieces

Peanut Sauce

  • 2 tbsp smooth peanut butter, heaped
  • 3 tbsp hot water
  • 1 tbsp sesame oil
  • 2 tbsp dark soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tsp dried chilli flakes

Additional Flavorings

  • 1 tbsp ginger, grated
  • 4 cloves garlic, grated or crushed
  • 1 tbsp sesame seeds

Instructions

  1. Cook Noodles: Prepare the egg noodles according to the package instructions. Once cooked, drain and rinse them under cold water to stop the cooking process and prevent sticking.
  2. Prepare Sauce: In a bowl, combine the smooth peanut butter, hot water, sesame oil, dark soy sauce, hoisin sauce, rice vinegar, and dried chilli flakes. Mix well until smooth and set aside.
  3. Cook Chicken: Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Season the chicken pieces with salt and stir-fry them until cooked through and lightly browned. Remove the chicken from the wok and set aside on a plate.
  4. Stir-fry Vegetables: Add the remaining 1 tablespoon vegetable oil to the wok. Quickly stir-fry the grated ginger and crushed garlic for a few seconds until fragrant. Add the julienned carrot and thinly sliced cabbage. Stir-fry over high heat for about 5 minutes, cooking until the vegetables are slightly browned but still crisp.
  5. Combine Ingredients: Return the cooked chicken to the wok. Add the drained noodles and green onions. Pour the prepared peanut sauce over all the ingredients and toss well to coat everything evenly.
  6. Garnish and Serve: Sprinkle the peanut sesame seeds on top and optionally add extra sliced green onions. Serve hot, accompanied by Chinese chilli oil on the side for extra heat if desired.

Notes

  • If you prefer a spicier dish, increase the dried chilli flakes or drizzle additional chilli oil when serving.
  • For a vegetarian version, substitute chicken with firm tofu or extra vegetables.
  • The noodles can be swapped for rice noodles or whole wheat noodles based on preference.
  • Make sure not to overcook the vegetables to maintain a pleasant crunch.
