Ingredients
Scale
Blondie Batter
- 1 cup butter (room temperature)
- 3/4 cup sugar
- 1 large egg
- 3 tablespoons lemon juice
- 2 tablespoons lemon zest
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2¼ cups all-purpose flour
- 1 cup strawberries (diced)
Strawberry Lemon Frosting
- 2 tablespoons butter (room temperature)
- 1 cup powdered sugar
- 1–2 tablespoons strawberry jam
- 1 tablespoon lemon juice
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the blondies.
- Cream Butter and Sugar: In the bowl of a stand mixer fitted with the paddle attachment, cream together the room temperature butter, sugar, lemon juice, and lemon zest until the mixture is light and fluffy, about 1-2 minutes.
- Add Egg: Add the large egg to the creamed mixture, scraping down the sides of the bowl as needed to combine thoroughly.
- Mix Dry Ingredients: Add the baking powder, salt, and all-purpose flour to the wet ingredients. Beat on low speed until just combined with no streaks of butter visible; avoid overmixing to keep the blondies tender.
- Fold in Strawberries: Gently fold the diced strawberries into the batter to distribute them evenly without breaking them down.
- Prepare Baking Pan: Line a 9″ x 9″ baking pan with parchment paper or lightly grease it with nonstick cooking spray. Press the batter evenly into the bottom of the pan.
- Bake: Bake the blondies in the preheated oven for 20-25 minutes, or until the edges are just beginning to turn golden brown.
- Cool Slightly: Remove the blondies from the oven and allow them to cool slightly while you prepare the frosting.
- Make Frosting: Using the stand mixer, cream the room temperature butter and ½ cup powdered sugar until light and fluffy. Add the remaining powdered sugar, strawberry jam, and lemon juice and mix again until the frosting is smooth and spreadable. Adjust consistency with more lemon juice or powdered sugar if needed.
- Spread Frosting: Using an offset spatula, spread the strawberry lemon frosting evenly over the warm blondies, covering the entire surface.
- Cool Completely and Serve: Let the blondies cool completely to set the frosting, then cut into 9 even squares and serve.
Notes
- Ensure the butter is at room temperature before creaming for optimal texture.
- Do not overmix the batter once the flour is added to prevent tough blondies.
- Adjust frosting consistency by adding more lemon juice for a thinner glaze or powdered sugar for a thicker spread.
- Diced strawberries can be substituted with fresh raspberries or blueberries for a different berry twist.
- Store blondies in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
