Instructions
- Preparation: Preheat the oven to 400°F (200°C). Peel and cut the potatoes into halves or quarters. Boil them in salted water until tender, approximately 15-20 minutes. Drain and allow to cool slightly.
- Form the Nests: When the potatoes are cool enough to handle, scoop out a portion of the flesh from each piece to create a nest shape with a hollow center, leaving enough potato around the edges to hold the filling.
- Cook the Ground Beef Mixture: Heat butter or oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the ground beef along with garlic powder, paprika, salt, and pepper. Cook until the beef is browned and fully cooked through.
- Assemble the Nests: Grease a baking sheet with butter or oil. Place each potato nest on the sheet and spoon the cooked ground beef mixture evenly into the center of each nest.
- Add Cheese and Bake: Top each stuffed nest with shredded cheese. Bake in the preheated oven for 25-30 minutes until the cheese is melted and bubbly and the edges of the potato nests are crispy.
- Serve: Remove from the oven, garnish with chopped parsley if desired, and serve the nests warm.
