Instructions

  1. Preparation: Preheat the oven to 400°F (200°C). Peel and cut the potatoes into halves or quarters. Boil them in salted water until tender, approximately 15-20 minutes. Drain and allow to cool slightly.
  2. Form the Nests: When the potatoes are cool enough to handle, scoop out a portion of the flesh from each piece to create a nest shape with a hollow center, leaving enough potato around the edges to hold the filling.
  3. Cook the Ground Beef Mixture: Heat butter or oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the ground beef along with garlic powder, paprika, salt, and pepper. Cook until the beef is browned and fully cooked through.
  4. Assemble the Nests: Grease a baking sheet with butter or oil. Place each potato nest on the sheet and spoon the cooked ground beef mixture evenly into the center of each nest.
  5. Add Cheese and Bake: Top each stuffed nest with shredded cheese. Bake in the preheated oven for 25-30 minutes until the cheese is melted and bubbly and the edges of the potato nests are crispy.
  6. Serve: Remove from the oven, garnish with chopped parsley if desired, and serve the nests warm.
