Ingredients
Scale
Potato Nests
- 2 large potatoes (starchy varieties like russet work best)
- Butter or oil for greasing the baking sheet
- Chopped parsley for garnish (optional)
Ground Beef Topping
- 1 lb ground beef (or substitute with ground turkey, chicken, or plant-based alternatives)
- 1 cup shredded cheese (cheddar, mozzarella or pepper jack)
- 1 onion, chopped
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preparation: Preheat your oven to 400°F (200°C). Peel and cut the potatoes into halves or quarters. Boil them in salted water until tender, approximately 15-20 minutes. Drain the potatoes and let them cool slightly to handle.
- Create Potato Nests: Once cool enough, carefully scoop out portions of the potatoes to form nests, leaving some potato at the base and sides for structure.
- Sauté Onions: In a skillet over medium heat, add butter or oil and sauté the chopped onion until translucent, about 3-4 minutes.
- Cook Ground Beef: Add the ground beef to the skillet. Season with garlic powder, paprika, salt, and pepper. Cook, breaking up the meat, until browned and fully cooked through.
- Assemble Nests: Grease a baking sheet with butter or oil. Place each potato nest onto the sheet, then spoon the savory ground beef mixture into the center of each nest.
- Add Cheese: Top each stuffed nest with shredded cheese of your choice.
- Bake: Bake in the preheated oven for 25-30 minutes, or until the cheese is melted, bubbly, and the edges of the potato nests turn crispy and golden brown.
- Serve: Garnish with chopped parsley if desired and serve warm for best taste and texture.
Notes
- Use starchy potatoes like russet for the best texture in the nests.
- Ground beef can be substituted with lean ground turkey or plant-based meat alternatives for a lighter or vegetarian option.
- Feel free to experiment with different cheeses such as mozzarella or pepper jack for varied flavors.
- Make sure to season the beef mixture well with garlic powder, paprika, salt, and pepper to enhance flavor.
- These potato nests can be prepared ahead and assembled before baking to save time.
- Leftovers can be refrigerated and reheated in the oven to maintain crispiness.
