Description

Stuffed Potato Nests with Savory Ground Beef Topping is a comforting and flavorful dish featuring crispy potato shells filled with a seasoned ground beef mixture and topped with melted cheese. This recipe combines tender boiled potatoes shaped into nests, a savory sautéed beef and onion filling, and a cheesy baked finish, perfect for a hearty family meal or casual dinner.

Ingredients

Scale

Potato Nests

  • 2 large potatoes (starchy varieties like russet work best)

Ground Beef Topping

  • 1 lb ground beef (can be substituted with ground turkey, chicken, or plant-based alternatives)
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Additional Ingredients

  • 1 cup shredded cheese (cheddar, mozzarella, or pepper jack)
  • Butter or oil for greasing the baking sheet and sautéing
  • Chopped parsley for garnish (optional)

Instructions

  1. Preparation: Preheat your oven to 400°F (200°C). Peel and cut the potatoes into halves or quarters. Boil them in salted water until tender, about 15-20 minutes. Drain and let cool slightly.
  2. Form Potato Nests: Once the potatoes are cool enough to handle, scoop out a portion from the center of each to create a nest shape, being careful not to break the shell.
  3. Sauté Onions: In a skillet, heat some butter or oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Cook Ground Beef: Add the ground beef to the skillet with the onions. Sprinkle in garlic powder, paprika, salt, and pepper. Cook the mixture until the beef is browned and cooked through, stirring occasionally to break up clumps.
  5. Fill Potato Nests: Place the potato nests onto a greased baking sheet. Spoon the savory ground beef mixture into each nest, filling them generously.
  6. Add Cheese and Bake: Top each filled potato nest with shredded cheese. Bake in the preheated oven for 25-30 minutes, or until the cheese has melted and the edges of the potato nests are crispy.
  7. Garnish and Serve: Remove from oven, sprinkle with chopped parsley if desired, and serve warm.

Notes

  • Use starchy potatoes like russet for crispy nests that hold their shape well.
  • You can substitute ground beef with ground turkey, chicken, or plant-based alternatives to suit dietary preferences.
  • Adjust spices to taste, adding chili powder or cumin for a spicier flavor.
  • For extra crispy nests, brush the potato shells with a little melted butter before baking.
  • Leftover nests can be refrigerated and reheated in the oven to maintain crispiness.
