Description
Delicious stuffed potato nests filled with a savory ground beef topping, baked until golden and topped with melted cheese. This comforting dish combines fluffy potatoes with a flavorful beef mixture, making it perfect for a satisfying meal or appetizer.
Ingredients
Scale
Potatoes
- 2 large potatoes (Russet or other starchy varieties work best)
Ground Beef Topping
- 1 lb ground beef (or substitute with ground turkey, chicken, or plant-based alternatives)
- 1 onion, chopped
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Other Ingredients
- 1 cup shredded cheese (Cheddar, mozzarella, or pepper jack)
- Butter or oil for greasing the baking sheet and cooking
- Chopped parsley for garnish (optional)
Instructions
- Preparation: Preheat your oven to 400°F (200°C). Peel and cut the potatoes into halves or quarters. Boil them in salted water for about 15-20 minutes until tender. Drain and let cool slightly.
- Create Potato Nests: Once the potatoes are cool enough to handle, scoop out portions of the potato flesh to create nest shapes, leaving walls thick enough to hold the filling.
- Sauté Onion: In a skillet, heat butter or oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Cook Ground Beef: Add the ground beef to the skillet with the onion. Season with garlic powder, paprika, salt, and pepper. Cook until the beef is browned and cooked through, breaking it apart as it cooks.
- Assemble Potato Nests: Place the potato nests on a greased baking sheet. Spoon the savory ground beef mixture into each nest evenly.
- Add Cheese: Top each filled nest with shredded cheese of your choice.
- Bake: Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and the edges of the potato nests are crispy and golden.
- Garnish and Serve: Remove from the oven and sprinkle chopped parsley over the nests if desired. Serve warm.
Notes
- Using starchy potatoes like russet gives the best texture for the nests.
- You can substitute ground beef with ground turkey, chicken, or plant-based meat alternatives for different dietary preferences.
- Feel free to customize the cheese topping with different varieties to suit your taste.
- Make sure not to scoop too much potato out to prevent nests from falling apart during baking.
- This dish can be prepared ahead of time and baked when ready to serve.
