  • Total Time: 50 minutes
  • Yield: 4 servings 1x

Description

This Honey Mustard Chilli Chicken recipe is a delightful fusion of sweet and spicy flavors, featuring crispy skin-on chicken thighs baked in a luscious honey mustard and sweet chili sauce. Served with steamed rice and green beans, it makes for a quick, satisfying, and flavorful dinner that balances tang, sweetness, and heat.

Ingredients

Scale

For the Chicken

  • 4 pieces Chicken Thighs (skin-on for crispy texture)
  • 3 cloves Garlic (minced for maximum flavor infusion)

For the Sauce

  • 2 tablespoons Plain Flour (can use cornstarch as gluten-free substitute)
  • 3 tablespoons Wholegrain Mustard (Dijon mustard can be used)
  • 4 tablespoons Honey (maple syrup for vegan option)
  • 200 ml Chicken Stock (low-sodium for healthier choice)
  • 100 ml Organic Sweet Chilli Sauce (adjust based on heat preference)

For Serving

  • 200 grams Green Beans (broccoli or asparagus are good substitutes)
  • 2 cups Steamed Rice (quinoa is a healthy alternative)

Instructions

  1. Preheat Oven: Set your oven to 200°C (180°C fan-forced) to get it hot and ready for baking the chicken, which ensures a perfectly cooked and crispy finish.
  2. Brown Chicken: Heat oil in an ovenproof pan over medium-high heat. Brown the skin-on chicken thighs for about 4 minutes per side to develop a golden, flavorful crust.
  3. Sauté Garlic: Add the minced garlic to the pan with the browned chicken and stir for about 30 seconds until fragrant, enhancing the aroma and richness of the dish.
  4. Prepare Sauce: Sprinkle plain flour over the garlic and chicken, stirring well to combine. Whisk in honey, wholegrain mustard, chicken stock, and sweet chilli sauce, bringing the mixture to a gentle simmer to thicken and blend the flavors.
  5. Combine Chicken & Sauce: Return all chicken pieces to the pan, coating them thoroughly with the luscious sauce to prepare for baking.
  6. Bake: Transfer the ovenproof pan to your preheated oven and bake for 30-35 minutes until the chicken is fully cooked, tender, and the sauce has formed a sticky glaze.
  7. Serve: Plate the Honey Mustard Chilli Chicken alongside fluffy steamed rice and vibrant green beans for a balanced and flavorful meal. Optionally garnish with fresh parsley or cilantro for an extra burst of freshness and color.

Notes

  • Garnish with fresh herbs like parsley or cilantro for added flavor and visual appeal.
  • Ensure chicken thighs are well browned before baking to lock in juices and enhance flavor.
  • Avoid overcooking garlic; sauté only until fragrant to prevent bitterness.
  • Adjust the heat of the dish by varying the amount of sweet chili sauce to suit your preference.
  • If the sauce becomes too thick, add a splash of chicken stock or water to loosen it without compromising flavor.
  • Use cornstarch instead of flour for a gluten-free version.
  • Swap honey with maple syrup to make the recipe vegan-friendly.
  • Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
  • Reheat frozen leftovers in a 180°C oven for 20 minutes or microwave until warm.
