Instructions

  1. Make the chocolate pudding: In a saucepan, whisk together the milk, sugar, cocoa powder, cornstarch, and salt. Bring the mixture to a boil over medium heat, stirring constantly to prevent lumps. In a separate bowl, beat the eggs. Slowly pour some of the hot milk mixture into the eggs to temper them, whisking constantly. Return the tempered egg mixture back into the saucepan and continue cooking on medium heat, whisking frequently until the pudding thickens.
  2. Prepare the crust: Melt the butter and mix it thoroughly with the crushed graham crackers. Press this mixture firmly into the bottoms of individual serving cups to form the crust layer.
  3. Assemble and chill: Pour the freshly made chocolate pudding over the graham cracker crust in each cup. Sprinkle additional crushed graham crackers and marshmallows on top. Place the cups in the refrigerator and chill for at least 2 hours to set the pudding and allow flavors to meld.
